Adding Protein to My Day: “Caramel Sundae” Yogurt Parfait Recipe
As I wrap-up the 3rd month of my fitness transformation, the weight, body fat and inches keep melting away. I’ve lost track of how many days I’ve been working out & how many pounds & inches I’ve lost. Excessive tracking isn’t necessary because exercise and healthy eating are now part of my daily life. While I do indulge in “cheat” meals every now and then, I am pretty much sticking to a balanced diet high in protein, good carbs and good fats. That being said, I am always looking for new ways to add more protein to my diet. A gal can only eat so much chicken, fish, eggs! That’s why I was excited when I was contacted to try Nature Valley™ Protein Granola. Super tasty and conveniently packaged, ½ cup Nature Valley™ Protein Granola provides 10 grams of protein and 22-26 grams of whole grain, at least 48 grams of whole grain recommended daily.
Everyone at home eagerly scooped handfuls of the Nature Valley™ Protein Granola into their mouths & cereal, and sprinkled it onto their fruit. I was excited to finally be able to make my own yogurt parfaits! I am not interested in the expensive, high-sugar options I see at the grocery store. I especially hate having to dig my spoon into the bottom of any container in search of fruit and flavor. So I created a fun, healthy and delicious high-protein yogurt parfait recipe using 3 simple ingredients in addition to my Nature Valley™ Protein Granola. Then I dressed it up to look like a caramel sundae. The result? A healthy snack nobody could resist!
“Caramel Sundae” Yogurt Parfait
1/2 cup Nature Valley™ Protein Granola
5 oz non-fat, plain Greek yogurt
5 small strawberries, thinly sliced (1 whole strawberry for garnish)
Honey (small amount to drizzle on top)
Optional: Ice Cream Sundae glass
Beginning with the Nature Valley™ Protein Granola, layer all ingredients inside your dish to create a balance that results in great flavor every bite. (I layered granola, yogurt, strawberries, granola, yogurt, etc.) Add the largest dollop of yogurt at the top, sprinkle generously with the remaining Nature Valley™ Protein Granola and lightly drizzle with honey for an extra touch of sweetness and to finish the “caramel sundae” look. Dip your spoon in and enjoy!
