Pumpkin Streusel French Toast with Pumpkin Pie Whipped Cream
I post a lot of healthy, better-for-you recipes here at Flowers Croon, but I thought it was about time I shared a really bad-for-you-but-soooo-good recipe. Cue the sugar.
I picked up a loaf of Archer Farms Pumpkin Streusel Breakfast Bread last week at Target, and thought it might fun to have as toast with scrambled eggs or a cup of coffee. I was right. After Thanksgiving I found myself with a fridge full of left over pumpkin pie whipped cream, and decided I could use it as a topping for a really good french toast - on that really good bread. The result was sweet heaven!
Pumpkin Streusel French Toast with Pumpkin Pie Whipped Cream
Ingredients (Makes about 4 slices. Double recipe to make 8 slices):
4 slices of Archer Farms Pumpkin Streusel Breakfast Bread (or make your own)
2 eggs
2 tablespoons of butter
1/8 cup milk
1/4 teaspoon vanilla
1 tablespoon sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
pumpkin pie whipped cream (recipe below)
maple syrup
Directions:
Melt butter in non-stick skillet over medium heat
Add dry ingredients to empty bowl (sugar, cinnamon, nutmeg) whisk gently
Now, add liquid ingredients to the dry ingredients (milk, eggs, vanilla) whisk gently
Dip bread into egg mixture, really coating both sides
Drop bread into skillet and cook each side evenly
Top with a dollop of pumpkin pie whipped cream and lightly drizzle with maple syrup
Pumpkin Pie Whipped Cream
Ingredients:
1 cup heavy whipping cream
3 tablespoons light brown sugar
1/2 teaspoon pumpkin pie spice
Directions:
In a chilled mixer bowl or with a hand mixer, beat the heavy cream until it begins to thicken (start off at a lower speed so you don't splash yourself)
Add dry ingredients (light brown sugar, pumpkin pie spice) and continue to beat until peaks form
